Tribute Breakfast for Anthony Bourdain – Acai bowls

The great storyteller Chef Anthony Bourdain has died of suicide on Friday morning.  He was found unresponsive by chef Eric Ripert, a close friend of Bourdain, in his hotel room in France.  Anthony Bourdain was working on an episode of his CNN show, “Parts Unknown.”

In a statement, CNN said:

“It is with extraordinary sadness we can confirm the death of our friend and colleague, Anthony Bourdain. His love of great adventure, new friends, fine food and drink and the remarkable stories of the world made him a unique storyteller. His talents never ceased to amaze us and we will miss him very much. Our thoughts and prayers are with his daughter and family at this incredibly difficult time.”

Anthony Bourdain was called by The Smithsonian “The original Rock Star of the culinary world”. He was a TV Chef,  Book Author, and a restaurateur are among his successful fields where he share his passion for cooking.  He was best known for his travel shows such as Parts Unknown, No Reservation, and A Cook’s Tour. He authored few books like Kitchen Confidential, Medium Raw, and A Cook’s Tour.

CNN’s statement continued:

“His love of great adventure, new friends, fine food and drink and the remarkable stories of the world made him a unique storyteller.

“His talents never ceased to amaze us and we will miss him very much. Our thoughts and prayers are with his daughter and family at this incredibly difficult time.”

Acai – A small purple berry, rich in antioxidants, from Brazil and other parts of tropical Latin America. Pronounced ah-sah-ee.

  • 1/2 to 3/4 cup acai juice, Sambazon brand preferred
  • 2 bananas, peeled
  • 7 ounces frozen unsweetened acai puree, Sambazon brand preferred
  • 3/4 cup frozen blueberries
  • 1/4 to 1/2 cup fresh or frozen strawberries or raspberries
  • 1/2 cup granola (optional)
  • 1/4 cup cacao nibs (optional)

You’ll also need a high-speed blender like a VitaMix or a Nutribullet Rx.



Place the acai juice and one of the bananas in the blender, then add the frozen acai puree, blueberries and strawberries on top so the blades suck in the frozen items. Pulse as needed to form a smooth sorbet, scaling down the sides of the pitcher with a spatula as necessary.

Slice the remaining banana. Divide the mixture between two bowls and top each with the garnishes. Serve immediately.

• Always wash hands before handling food. Illnesses are easily transferred from person to person through food. Washing hands before touching fruits, vegetables and other foods helps to kill any bacteria that may be transferred from the person's hand to the food.

• When handling raw meat, poultry or pork, always clean up thoroughly.

Don't just wash your hands but also clean the surfaces of cutting boards, countertops and utensils you use. The bacteria known as salmonella spreads easily on surfaces that come in contact with raw meat.

• Avoid eating undercooked food. Undercooked beef, chicken and seafood increase a person's chance of getting salmonella or E. coli, another type of bacteria. This can cause fever, cramps, nausea, vomiting and diarrhea.

• Do not eat foods that contain raw eggs. Raw eggs may be contaminated with salmonella, which can be killed by cooking. When cooking, always throw away cracked or dirty eggs.

• Avoid drinking juices that have not been pasteurized. The pasteurization process kills bacteria such as E. coli.

• Avoid canned foods that are bulging or dented, or jars that are cracked. Lids should not be loose or swollen. Look at the "sell by" and "use by" dates. Avoid foods that will expire soon after purchasing and never buy outdated foods.

• Properly store and refrigerate foods when they're brought home. Cooked foods should not be left to stand at room temperatures for long periods before serving, and leftovers should be refrigerated within two hours.

• When in doubt, throw it out. If you aren't sure if that leftover is safe to eat, then toss it in the trash.

There’s no law that says you have to eat breakfast foods for breakfast. You legitimately might not feel hungry in the morning, particularly if you aren’t accustomed to eating breakfast. But you should eat something, even if you make a fairly light choice, like fruit and yogurt. Trying to lose weight is the worst excuse of all. Study after study shows that people who skip breakfast end up eating more the rest of the day than people who eat a solid breakfast every morning.

So how do you get the magical mix of the right nutrients that will give you energy and send you healthfully into your day?

It’s not that hard, really. Spend a little bit of time thinking about what you like and then plan some healthy breakfasts. Here are some ideas to get you started:

* If you need something portable, the ever-popular smoothie is a good choice. Be careful when you purchase a smoothie at a shop, however, as some can have as many as 600 calories. You can purchase a good blender or smoothie maker to have at home and whip up your own smoothie in less time than it takes to stop at a smoothie store, and you’ll know exactly what’s in it.

* For an even faster breakfast, try making some breakfast burritos and keeping them in the freezer. You can use regular or whole-wheat tortillas, scrambled eggs (either whole, all whites, a mix, or an egg product), some veggies like peppers and onions, and soy sausage. These freeze beautifully. Pull one out, and while you’re pouring your coffee, it can be heating in the microwave. Add a banana or apple for on-the-go dining.

* Cereal is a fine breakfast, as long as it’s not the only thing you eat. Consider adding some banana or blueberries on top, or fixing it with soy milk for a healthy dairy addition. Otherwise, stick to skim milk.

* If you don’t like breakfast, consider making a peanut butter and jelly sandwich on wheat bread. Grab a banana on the way out the door. Have some leftover vegetarian pizza from dinner? That’s a fine breakfast, though you will want to add a glass of milk or some fruit to round it out.

* Trying to lose weight? Breakfast might be the easiest meal to fill up without using a lot of calories or fat. Have oatmeal with soy milk, or a high-fiber cold cereal. Consider a homemade version of a fast-food sandwich. You can fry up an egg, add a slice of Canadian bacon and put the two into a toasted English muffin for a 200-calorie, filling breakfast.
